Grandma's Low Carb Black Bean Brownies

Grandma's Low Carb Zucchini, Protein, Chocolate Chip Muffins

Low Carb Brownies

Depending on how you slice these will determine how many low carb, healthy goodies you get. 


Ingredients:

1/4 c organic cacao powder (can use coco powder)

2/3 c organic coconut sugar

1/3 c organic almond flour

1/2 c organic coconut flour

1 1/2 tsp baking powder

1/2 tsp Pink Himalayan Salt

1 tsp instant coffee (dry granules)


1 can organic black beans (rinsed)

8 eggs (room temperature)

1/2 c organic olive oil

1 tsp organic vanilla extract


Add ins:

1/2 c Lilly's Baking Chips (your favorite flavor)

1/2 c chopped walnuts


Directions:

  1. Rinse beans until no foam is left.
  2. Place beans and oil in blender and mix until smooth.
  3. Add into blender eggs and vanilla and continue to mix.
  4. Place dry ingredients in mixing bowl and whisk until combined.
  5. In dry ingredient mixing bowl, slowly add in wet ingredients from blender and mix until smooth.
  6. Fold in chocolate chips and nuts (if desired).
  7. Grease 9 x 12 baking dish (butter or coconut oil)
  8. Preheat over to 350.
  9. Pour batter into baking dish and let sit for 20 minutes.
  10. Bake for 20 minutes or until tester comes out clean.
  11. Cool on wire rack for 15 minutes

Grandma's Low Carb Zucchini, Protein, Chocolate Chip Muffins

Makes 12 low carb, healthy muffins


Ingredients:

1/2 c organic coconut flour

2 scoops Orgain Grass-Fed Whey (Creamy Chocolate Fudge) Protein Powder

1 tsp baking powder

1 tsp organic cinnamon

1/2 tsp Pink Himalayan Salt

2 tbsp organic coconut sugar

5 eggs (medium)

1/4 c butter or coconut oil (melted)

1 tsp vanilla extract

1 c grated zucchini (or yellow) squash

1/2 c Lilly's Chips (any flavor)

1/2 c walnuts chopped


Directions:

  1. In a medium mixing bowl add in coconut flour, protein powder, baking powder, cinnamon, and salt. 
  2. Whisk dry ingredients to combine.
  3. Add in eggs, vanilla, and butter.
  4. Mix until well combined.
  5. Fold in zucchini, chips, and nuts until combined.
  6. Preheat oven to 350.
  7. Prepare silicone muffin pans with coconut oil. 
  8. Scoop batter onto muffin cups.
  9. Bake for 15-20 minute until tester comes out clean.
  10. Remove from oven and cool tray on wire rack for 10 minutes.
  11. Transfer muffins to wire rack to cool completely.


Grandma's Keto Caramel Donuts

Grandma's Low Carb Zucchini, Protein, Chocolate Chip Muffins

Keto Caramel Donut

Looking for a tasty alternative to wheat, sugar filled donuts.  This low carb, healthy recipe is what you are looking for.


Makes 12 donuts


Ingredients:

2 c organic almond flour

1/4 c organic coconut sugar

2 scoops Herbalife Baking Mix*

1 tsp baking powder


4 eggs (room temperature)

1/4 c butter or coconut oil (melted)

1/2 c almond milk (unsweetened)

1/2 tsp vanilla extract

2 tsp monk fruit caramel liquid


Directions:

  1. Add all dry ingredients into a large mixing bowl.
  2. Whisk dry ingredients to combine well.
  3. Add all wet ingredients into dry ingredients.  Mix until smooth.  Batter will be thick.
  4. Grease silicone donut pan cups  (butter or coconut oil)
  5. Preheat over to 350.
  6. Fill donut pan cups to top.
  7. Let donut batter sit for 20 minutes on counter before baking.
  8. Bake for 15 minutes or until golden brown.
  9. Cool donut pan on wire rack for 10 minutes.
  10. Transfer donuts from pan to wire rack to cool completely.

Donuts can be frozen.


* I do not sell Herbalife, but used their mix in this recipe.

Grandma's Keto Chocolate Cinnamon Donuts

Keto Chocolate donut

Makes 6 low carb, healthy donuts


Ingredients:

1/2 c organic coconut flour

1/4 c organic coconut sugar

1/4 c organic cacao powder

2 scoops Herbarlife Baking Mix*

1 tsp Cinnamon

1/4 tsp Pink Himalayan Salt

1/4 tsp baking soda


6 eggs (room temperature)

1/4 c almond milk (unsweetened)

1/4 c butter (unsalted) melted

1 tbsp vanilla extract


  1. Place dry ingredients in mixing bowl.  Use whisk to mix together dry ingredients.
  2. Add in all wet ingredients and beat slow speed with hand mixer until no lumps.
  3. Grease silicone donut pan (butter or coconut oil).
  4. Fill donut pan cups to top.
  5. Preheat oven to 350.
  6. Let donut batter sit for 20 minutes on counter before baking.
  7. Bake for 20 minutes
  8. Cool 10 minutes in pan on wire rack.
  9. Remove donuts from pan and place on wire rack to cool completely.

Donuts can be frozen.  

If doubling to make 12 donuts, do not double the cacao powder.

Grandma's Cabbage and Ground Beef

Cabbage and Beef Main Dish

Ingredients:

1 lb organic grass-fed ground beef

2 tsp organic olive oil

1/2 jar of Silver Palate Low Sodium Marinara sauce

1/4 - 1/2 head organic cabbage cut in chunks

1 tsp Rosemary, Lemon, Sea Salt spice

1 tsp dry minced onion

Pink Himalayan Salt

Fresh Ground Pepper

Grated Parmesan Cheese


Directions:

  1. Add olive oil, ground beef, and minced onion to pan.  Brown beef and drain.
  2. Add sauce and cabbage to beef and continue to cook on low until cabbage is tender (to your preference).
  3. Serve with salt, pepper, and parmesan cheese.
